Cultured Dextrose

Cultured dextrose is a natural preservative produced by wild fermentation of dextrose (sugar) rich materials. It consists of a mixture of organic acids, peptides, and other metabolites that inhibit the growth of undesirable bacteria and mold in food and extend the shelf life of various products, such as yeast raised baked goods, sauces, meats, processed chesses, salad dressings, and more. Our plant based, high purity cultured dextrose is a clean label alternative to chemical additive calcium propionate, sorbate and benzoate. It offers a direct two-to-one (2:1) replacement of calcium propionate in bakery products such as bread and tortilla, minimizing the effort in reformulation. It can also be labeled as natural flavor depending on the usage level, favorably in beverages. Furthermore, its the cost-in-use in baked goods is at least 50% lower than industrial leading cultured dextrose or wheat brands. Newly launched cultured wheat flour product boasts the highest propionate content (>50% as calcium salt) on the marketplace.

Xylo-oligosaccharide (XOS)

Soluble prebiotic fiber Xylo-oligosaccharide (XOS) is an emerging food and feed ingredient produced from inexpensive and renewable resource. It is considered a functional oligosaccharide and has great prebiotic potential. At lower dose, XOS demonstrates comparable efficacy to other prebiotic such as inulin and fructooligosaccharides (FOS). XOS has low viscosity, excellent water solubility and tolerance to high temperature and low pH, in addition to prebiotic property, it has a variety of functional activities including anti-inflammation, antioxidative, and antimicrobial.

Our XOS is prepared by propriety enzymes and considered a natural ingredient. It can be added to a variety of foods, including bakery products, dairy products, fruit jelly, chocolates, and drinks. It also serves as a good bulking agent for low calorie products using high intensity sweeteners such as stevia or in beverage or fruit drink as a functional ingredient due to its high solubility.
